The anticipation has been building for Hoyne Brewing to open for quite a while. The owner, Sean Hoyne, left his long-time post as brewmaster at the Canoe Club earlier this year and started building his own place. He's got some good company for neighbours - the Moon Under Water just up the road and Driftwood in the 'back yard' (just across the parking lot).

We were excited to visit the brewery prior to opening as part of the BrewVIC homebrew club. Sean not only graciously offered his space, but was right in there with the group offering tips, cleaning equipment and chatting about the impending brewery. Peeking in on our recent visit, things have come a ways since then, even, and there was a great energy of excitement from everyone for the space to become a reality.

We were served by two enthusiastic volunteers who had come down on the first day they were "open" with generous samples of the two beers on tap. Sean was around as well, wishing everyone good cheer and enjoyment of his first batch.

Growler of Hoyner Pilsner via foodspotting.com

As you can see, the packaging was not quite ready, but Sean was signing every growler. Clearly they were doing good trade, since they had only been formally open a few hours by the time we got there, and this was Growler #53!

Normally I am not a pilsner person, but we were wowed by this one. So clean tasting, crisp with a nice aftertaste. So looking forward to the deliciousness that is coming in the near future.
